Chef John Fraser's passion for ingredients takes the spotlight at The Vermilion Club, elevating steakhouse staples to a familiar yet refined standard. The menu boasts an array of dry-aged meats, whole fish, vegetable-forward entrées and shellfish – with an emphasis on Northeastern favorites.
The bar program features a curated collection of classic cocktails, from the renowned to the forgotten. In celebration of these timeless libations, our bar team has crafted 70 innovative cocktails, categorized by their base spirit.
